Ingredients for 2 servings:
1 eggplant
1 medium zucchini
1 yellow bell pepper
1 red bell pepper
1 red onion
2 Tbsp oregano
Salt
Olive oil
Instructions
Preheat your oven to 175° C (convection oven).
Wash all vegetables and dice into approx. 1 sq cm cubes.
Pour some oil in a baking dish and add vegetables. Season with salt and oregano and more oil, to your liking. Combine a little with a spoon and bale for approx. 30-40 min.
It's great hot & cold!
