Egg Burger


Ingredients
For the buns (yields 1 portion)
2 Tbsp coconut butter
2 large eggs
salt
black pepper
1/4 cup water

For the hamburger (yields 5-6 portions, of which you'll use 1)
500g ground beef
50g grated parmesan cheese
1 Tbsp minced garlic
60g mozzarella cheese
1 tsp ground pepper

For the guacamole "Guatemala style" (yields 2-3 portions)
1 avocado
2 Tbsp lemon juice
salt, pepper
dried oregano

Instructions
Prepare the hamburger meat by combining all ingredients and separating portion of the size of approx. a ping pong ball.
Grab two round biscuit cutters (molds). Grease the inside well and put them on a plate or cutting board. Add a portion of meat and press down to adapt to shape.
Heat a pan over medium heat and add some coconut butter. When the pan is hot, add the meat with the mold, and when the patty shrinks away from the sides, remove mold and turn to cook on other side.
Repeat until all meat is done; you will need just one patty per burger, freeze leftover ones for future needs.
Meanwhile, mash the pulp of 1 avocado. Add lemon juice, salt, pepper and dried oregano according to your taste. Set aside.
Clean molds and grease them again. Place each egg in a bowl, whisk them and spice them with salt, pepper and any other spice you like.
Put molds in the hot pan and pour an egg into each mold. Add water to the pan (outside of molds) and turn down heat. Cover the pan and cook eggs until done. Transfer eggs with the help of a spatula to a paper lined plate.
Assemble burger: egg, avocado, meat, egg.


One Egg Burger contains approx. 332 kcal and 3.5 g of carbs.
