Quick & Easy lunch!
Ingredients for 1 person:
200 g salmon
1 tsp coconut oil
1 fennel bulb (approx. 250 g)
1 avocado
2 Tbsp Mayonnaise
2 Tbsp Extra Virgin Olive Oil
2 Tbsp lemon juice
salt & pepper to taste
Instructions:
Put your salmon on a plate and besprinkle it with 1 Tbsp lemon juice. Set aside.
Cut the fennel and the avocado in medium-small pieces and mix in a bowl.
Create a vinaigrette combining the oil, 1 Tbsp lemon juice, 1 Tbsp mayonnaise, salt and pepper, add to bowl and mix.
Heat a small skillet over high heat, add coconut oil. When the pan is hot, add salmon and lower heat to medium. Cook for a few minutes on one side, then turn and cook until through.
Serve with 1 Tbsp of mayonnaise and salad on the side.
