Paleo Chicken Nuggets


Ingredients for 1-2 portions
200g chicken breast
3 Tbsp ground flaxseeds
3 Tbsp sesame seeds
1 egg
1 Tbsp mustard
Salt & pepper to taste

Instructions
Preheat oven to 200°C.
Line a baking tray with parchment paper.
Dice chicken in 2x2 cm squares.
Mix egg, mustard, salt and pepper in one bowl. Mix flaxseed meal and sesame seeds in another bowl to create "breading".
Dip chicken bits in egg mixture, then turn in breading and place on baking tray.
Bake for 20 min.
Serve with sauce of your choice (in the picture: guacamole).
