This recipe is easy to adapt to smaller portions. I have used exactly one fourth of the recipe and a single portion skillet. I served it with a hamburger patty.
Ingredients for 4 large portions or 8 side dish-sized portions
1 kg fresh spinach
1 clove of garlic
olive oil
400 g ricotta or quark
4 eggs
40g grated parmesan cheese
salt, pepper and nutmeg to taste
Instructions
Preheat oven to 180° C.
Heat some oil in a large skillet and sauté the clove of garlic briefly. Add the cleaned spinach, turn heat to medium and cover skillet. Cook until size of spinach is reduced to about a third of its size, stirring occasionally (it shouldn't take more than 4-5 min anyways).
Once it's done, remove garlic and put spinach in a sieve. Gently squeeze out water with a wooden spoon.
Add ricotta or quark to a bowl. Add salt, pepper, nutmeg and mix with a fork. Add spinach and mix well. Then add egg and combine.
Grease a baking tray with some oil (or butter if you prefer) and pour spinach-cheese mixture. Cover with a layer of grated parmesan cheese.
Bake in oven for approx. 30 min. Let it cool slightly before removing from the tray.
1 side dish sized portion contains 123 kcal and 5 g of carbs.
