Raspberry Apple Muffins



Ingredients for approx. 22 muffins
6 eggs
80 ml quark
85 g honey
100 g melted butter
1 teaspoon powdered bourbon vanilla
90 g coconut flour
2 tsp baking powder
2 tsp baking soda
1/2 tsp salt
130 g apple sauce
180 g frozen raspberries

Instructions
Preheat oven to 180° C.
In a small bowl, mix eggs, quark, honey and butter.
In a large bowl, sift coconut flour, vanilla, baking powder, baking soda and salt. Add wet ingredients and whisk until the batter is soft and fluffy. The consistency vaguely resembles a mousse.
Fold in applesauce, and then fold in raspberries.
Line a muffin tray with paper muffin cups and fill them with approx. 1 tbsp of batter each.
Bake for approx. 15 minutes or until brown.

One muffin contains 86 kcal and 6g of carbs.
