Makes an excellent light dinner or lunch!
Ingredients for 2 servings
200 g small asparagus
6 slices of prosciutto crudo (raw ham)
6 large button mushrooms
3 tsp butter
1 Tbsp mayonnaise
Salt
Pepper
Paprika powder
Onion powder
Olive oil
Instructions
Prepare the mushrooms by cleaning them and carefully removing the stems. Season them with salt, pepper, paprika and onion powder. Fill the hole with half a tsp butter.
Clean the asparagus and chop off the last bit.
Heat some olive oil in a large skillet on high heat. Add mushrooms and asparagus and turn heat to medium.
After a few minutes, turn asparagus to cook on other side. The asparagus doesn't take long and it is more savory if crunchy. Remove it when it has developed some blisters and turned slightly golden.
The mushrooms will need a little while longer; they're done when they turned darker and the bottom is slightly golden.
Serve asparagus with 3 slices of prosciutto crudo, half a tablespoon mayo and mushrooms on the side.
