Idea: serve with a fresh green salad
Ingredients for 8 servings
1 quiche crust
1 quiche mixture
For the filling
1 tsp coconut butter
1 tsp cinnamon powder
salt and pepper to taste
500g ground beef
1 small onion, diced
2 Tbsp chopped parsley
100g grated zucchini
1 tsp tomato concentrate
Instructions
Preheat oven to 200°C.
Mix all ingredients (starting from the beef) in a bowl. Heat coconut butter in a large skillet and when the pan is hot, add content of bowl and sautée for 10 minutes until the meat is done. Add cinnamon during the first half of the cooking time; salt and pepper towards the end. Keep it on high heat so that all liquids evaporate quickly.
Fill the quiche crust with the prepared filling. Top with quiche mixture. Bake for approx. 30 min or until the mixture is set and golden brown.
Cool slightly before serving.
1 serving contains 460 kcal and 7g of carbs.
