Green pea & mint soup with coconut milk



















Ingredients
1/2 large onion
500g frozen peas
1 can of coconut milk (the creamy type)
1 handful of mint leaves
1 dice vegetable stock
5 dl water
1 Tbsp olive oil or coconut butter

Instructions
Chop onion in dices (they don't need to be small) and heat the oil in a pan. When hot, glaze the onion. Add the frozen peas and saute for a few minutes. Then, add the water and the stock. Bring to a boil while stirring.
Add the coconut milk and the mint leaves. Bring to a boil and cook for approx. 10 minutes.
Take away from heat, and puree with a hand blender or any tool of your liking.
You can serve the soup hot or cold, as you prefer.
