Ingredients for 2 servings
300g vegetables of your choice (I used zucchini, asparagus, button mushrooms and cherry tomatoes)
200g flounder fillet
Lemon juice
Olive oil
Salt
Pepper
Paprika
Dill
2 tsp mayonnaise
Instructions
Preheat oven to 180-200°C.
Chop up vegetable in bite-sized pieces. Take an oven skillet, grease with olive oil and add the vegetables. Season with salt and pepper and mix a bit with a spoon to evenly distribute the seasoning.
Lay the fillet on the vegetables, besprinkle with some lemon juice and season with salt, pepper, paprika and dill.
Bake in oven for 30 min. Serve with a teaspoon of mayonnaise.
