Green Bean Salad



Ingredients for 4 servings:
1 kg green beans
2 red onions
2 tsp dry broth powder
4 Tbsp olive oil
5 dl water
salt to taste

Instructions:
Wash the green beans and trim off ends.
In a large cooking pan, add water, broth and beans and bring to a boil on high heat. Lower heat to medium-low, cover pan adding a wooden spoon so the vapor can escape, and cook for approx. 20  minutes or until the beans are al dente.
Transfer beans into a sieve to get rid of excess water and let cool. Once cooled, add 2 red onions previously diced, the olive oil and salt to taste (note: they boiled in broth, which is already salty, so no need to add too much of salt).

(I used the red onions from Tropea, which is white inside, but you can also use a standard red onion)
