Ingredients (for 4 servings)
1/2 head of iceberg lettuce
1/2 large cucumber
2 broccoli
1 mozzarella
1 red onion
4 Tbsp of mixed nuts and seeds
1 Tbsp of broth powder
+ 1 portion of Honey Mustard Salad Dressing
Instructions
Heat approx. 3 cm of water in a cooking pan and add the broth powder. Meanwhile, take the broccoli, wash it and cut it into bite sized pieces. Put it straight into the pan. Bring water to a boil, cover pan and turn the heat to medium; let simmer for approx. 5 minute or until the broccoli is slightly softened (but still has a bit of firmness). Once ready, let cool.
Chop up the lettuce, the cucumber, and the onion according to your preference. Dice mozzarella. Combine everything in a bowl, add the mixed nuts and seeds; finally, add the salad dressing, mix well and serve.
