No-Brainer Veggie Stir-Fry


Ingredients (2 servings)
3 medium zucchini, sliced in 1 cm thick half moon-sized pieces
100 g fresh spinach
1 large red onion, roughly chopped
80 g feta cheese, diced
Salt
Pepper
Oregano
1 tsp coconut butter

Instructions
Heat the coconut butter in a wide skillet and saute the onion once it's hot. Add the zucchini, salt lightly and saute for 4-5 minutes.
Add the spinach, salt a little more, add pepper and sprinkle with oregano. Lower heat and cook until the spinach is reduced to half its size. Stir once in a while.
Add the feta, higher heat a bit and continue cooking for another minute or two, while stirring.
Remove from heat, serve.
