Ingredients for 3 small servings
300g beef, diced
50 ml red wine
1 small onion, minced
3 medium sized zucchini, cut in pieces (ca. 600 g)
1 handful of cherry tomatoes, cut in half (ca. 80g)
1 Tbsp parsley, minced
1 tsp coconut oil
1 Tbsp olive oil
salt, pepper
Instructions
Heat the coconut oil in a skillet on high heat, when hot add the onion. When the onion is transparent, add the beef and saute slightly. Deglaze with wine and turn heat down to medium.
Add the zucchini and the tomatoes, and salt slightly. Add parsley, and cover. Lower heat slightly.
Cook until the meat is well-done, but the vegetables still crunchy, approx. 10 minutes.
Season with olive oil, pepper and additional salt to your liking.
