Peperonata


Ingredients (serves 2)
1 yellow bell pepper
1 orange bell pepper
1 medium red onion
2 tomatoes (San Marzano)
6 Tbsp olive oil
Salt
Pepper
Oregano

Instructions
Preheat oven to 200° C.
Wash all vegetables, slice peppers in long stripes, cut tomatoes and onion in half and then in slices. They don't have to be thinly cut, maybe 5mm thick.
Take a baking tray, grease with half of the oil and add all vegetables. Add salt, pepper and oregano and top with the rest of the oil. Mix with a spoon.
Bake in oven for approx. 35-45 minutes (a good sign is if the oil turned orange, and the vegetables are still a bit firm).
