Bell Pepper Chicken alla Romana


Ingredients for 4 servings:
1,5 kg chicken in pieces (wings, legs, etc)
3 bell peppers, yellow and red
3-4 ripe tomatoes
2 cloves of garlic
1-2 dl white wine
salt
olive oil

Instructions:
Clean the vegetables, slice the peppers into stripes and dice the tomatoes.
In a large frying pan with high edges, heat the olive oil together with the garlic. Once hot, add the chicken and roast for a few minutes. Deglaze with the wine, turn the heat down to medium and add the peppers and tomatoes. Cover pan and let simmer for approximately 40 min.
Remove cover, turn heat to high and leave for 5 more minutes, until liquid is reduced to half.
