Ingredients for 1 pie-sized frittata (4 servings):
1 large zucchini
5 large button mushrooms
1 onion
260g diced ham
6 eggs
50g grated parmesan
Olive oil
Salt
Pepper
Instructions:
Dice the onion, shred the zucchini and slice the mushrooms. Heat some oil in a frying pan. Saute the onion, add the ham and after a few min, the veggies. Keep stirring, after 5 min turn down heat to medium and add salt. Cook until through and not so watery anymore.
Remove from heat, cool slightly. Add in a bowl together with all other ingredients, stir until well combined and fill a silicone or greased, round baking pan with the mixture.
Bake in preheated oven at 190°C for 12 min.
