Apple fritters (flourless)




Ingredients:
3 medium apples
coconut oil

For the batter
3 eggs
3 Tbsp coconut oil
3 Tbsp milk (or coconut milk)
1 tsp honey
1/2 tsp salt
1 tsp cinnamon
4 Tbsp coconut flakes
3 Tbsp hazelnut meal

Instructions
Whisk together all ingredients for the batter up to cinnamon in a bowl. Add the coconut flakes and hazelnut meal and stir until evenly mixed. Let sit for 5 min.
Heat some coconut oil in a frying pan at high heat.
Meanwhile, core the apples, peel them and slice them into 5 mm thick slices.
Once the frying pan is hot, turn down heat to medium. Dip the apple slices in the batter and transfer to pan (repeat until pan is full). When the batter is firm around the edges and golden brown, flip to cook the other side. Add more coconut oil to pan in between batches.
