Scrambled eggs "Malika Style"

Scrambled Eggs Malika Style


Ingredients (for 1-2 servings)
3 eggs
3 Tbsp milk
2 Tbsp grated Parmesan cheese
salt
pepper
paprika
oregano
1 Tbsp olive oil

Instructions
Mix eggs, milk and Parmesan in a bowl, then add salt, pepper, paprika and oregano to your liking. You can add any spices you want (garlic powder, onion powder, chili, etc.).
Heat some olive oil in a small skillet on high heat. When the skillet is hot, add the eggs mixture and let set for 10-15 seconds. Turn heat to medium-low. Then, with a wooden spoon, gently start scrambling the eggs, always turning the dry/ cooked side up and turning the moist size down. I like to scramble in wide circular motions, so larger clumps form and it doesn't brittle.
You have to watch the eggs, however you ideally remove the pan from the heat when they're a little over halfway through; the skillet will still be hot and the eggs will keep on cooking. Keep on scrambling; the eggs have to reach a creamy texture and still be slightly moist.
Transfer eggs to a plate when done and serve.
