You can use this recipe to top your favorite pasta or serve it with a side of rice, polenta, veggies... as you prefer. Or eat it just like this, like I did! As you can see from the photo, i didn't even manage to take a picture before starting to eat... yumm!
Ingredients for 2 servings
For the sauce
230 g canned tomato (1 can pelati)
1 small onion
1 bunch of basil leaves
salt
pepper
olive oil
For the meatballs
200g ground beef
20g grated parmesan cheese
1/2 clove garlic, minced
30 g mozzarella cheese, finely diced
1 egg
ground pepper
Instructions
Combine all ingredients for the meatballs in a small bowl and form ping-pong-ball sized meatballs (approx. 1 Tbsp for each). The mixture should yield about 10 meatballs. Set aside for the time being.
Heat some olive oil in a saucepan and finely chop the onion. When the oil is hot, add onion and stir for a few minutes until glazed.
Add the canned tomato and turn heat to medium. Chop up basil leaves and add them to the pan. Stir a bit, cook for approx. 5 minutes.
Then slowly dip the meatballs into the sauce with a tablespoon and cover them a bit with sauce if needed. Close the pan with its lid and keep on cooking without stirring at medium-low heat for another 15-20 min. When the meatballs are through and the sauce is turning slightly orange, you're all set. Remove saucepan from heat, add half a handful of salt (or to your taste) and some pepper. I like to salt in the end because you end up salting much less.
