Coconut Flour Quiche/ Pie Crust




Ingredients
110g melted coconut butter
120g coconut flour
2 eggs
1 pinch of salt


Instructions
Preheat oven to 200° C and place the rack in the lower part of the oven.
Melt the coconut butter and let cool slightly. Transfer in a bowl, add eggs and whisk well.
In a separate bowl, mix salt and coconut flour. Transfer dry ingredients into wet and combine. Let sit for a bit. If the dough seems too wet, add some coconut flour.
Grease a quiche pan and press dough into shape, forming also a crust. Puncture the dough with a fork.
Bake in oven for 10 minutes.
Cool down before using it.

Alternatives:
If you want to use it for a sweet pie, add some sweetener or 1-2 Tbsp honey to the dough.
