Ingredients for 1-2 portions
3 eggs
30g grated fontal cheese
1 small onion
100g button mushrooms
1 Tbsp coconut butter
1 Tbsp chopped parsley
Salt
Pepper
Paprika
Instructions
Chop the onion finely and slice the mushrooms.
Heat the coconut butter in a medium frying pan on high heat and glaze the onion. Add the mushrooms, turn the heat to medium and sauté for a minute or two. Set aside to cool slightly.
Meanwhile, in a small bowl beat the eggs, add the cheese, parsley and salt, pepper and paprika to taste.
Then add the mushrooms and onions from the pan and combine.
Put pan back on medium heat and pour mixture in the pan. Cook slowly and when the sides lift off easily and the omelet already has gained some firmness. Flip with the help of a plate and continue cooking until through (it should need less once flipped).
This omelet contains 470 kcal and 6 g of carbs.
