Cashew Hummus



Ingredients (makes 1 small bowl)
150g raw cashew nuts (= 1 cup)
2 Tbsp extra virgin olive oil + 1 Tbsp extra
2 Tbsp lemon juice
3 Tbsp tahini
1 small garlic clove
120 ml water (= 1/2 cup)
pepper
salt
paprika

Instructions
Soak the cashew nuts in water for at least 4 hours, ideally overnight.
In a food processor, add nuts, 2 Tbsp olive oil, lemon juice, tahini, garlic and the water. Blend until smooth. If your hummus gets too thick, add some more water (little by little) until you reach the consistency you desire.
Add salt and pepper to taste and blend again.
Transfer hummus to a small bowl, top with 1 Tbsp of olive oil and some paprika.
Enjoy!

1 Tbsp of hummus contains approx. 57 kcal and 2g of carbs.
