Melon & Cucumber Tartare with Raw Ham




Ingredients (serves 3)
150 g chanterais melon, diced
150 g peeled cucumber, diced
2 Tbsp goat cream cheese
2 Tbsp lemon juice
6 leaves mint, finely chopped
salt and pepper to taste
15 slices of raw ham

Instructions
Take a small bowl and add melon, cucumber and mint leaves and mix until combined.
Add one after the other, and mixing in between, the lemon juice, the goat cheese, the salt and the pepper.
On a plate, place a round cookie shape. Add the obtained tartare and press lightly to compress and shape. Decorate with a mint leave if desired.
Add 5 slices of raw ham and remove shape. Serve immediately.
